Maple Glazed Sweet Potatoes

You can substitute yams for the sweet potatoes.

Serves about 8

1-1/2 pounds sweet potatoes, cooked, peeled and quartered
1/2 cup maple syrup
1/2 cup orange juice
3 tablespoons butter, melted
1 tablespoon corn starch
1 teaspoon orange zest

Pre-heat oven to 350 F. Arrange sweet potatoes in a shallow baking dish. Combine remaining ingredients and pour over potatoes. Bake for 40 minutes, basting frequently, until hot and sauce is thickened.
