2 red bell peppers, chopped
1/2 cup chopped onion
5 cloves garlic, minced
1/3 cup butter
2 (4-ounce) cans diced green chili peppers, drained
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon ground red pepper
8 cups dry whole wheat bread cubes (from day-old bread left out in the open overnight)
1-1/2 cups shredded cheddar cheese
3/4 to 1 cup chicken broth

Saute red bell peppers, onion and garlic in butter in a medium saucepan over medium high heat, until slightly tender. Stir in chili peppers, parsley, salt and ground red pepper. Combine bread cubes, cheese and vegetable mixture in a large bowl. Add enough broth to moisten the mixture without it getting soggy. Toss lightly to mix evenly. Use to stuff turkey, and/or place in a greased casserole dish and cover with aluminum foil. Bake at 325 F for about 1 hour or until hot.
