Beef Rib Roast

Serves about 10

1 tablespoon ground mustard
1 tablespoon garlic powder
salt and pepper to taste
1 (6 to 8 pound) beef rib roast
1/4 cup water
1/4 cup beef broth
1 tablespoon red wine vinegar

Pre-heat oven to 350 F. Combine mustard, garlic powder, salt and pepper and rub all over roast. Place the roast fat side up in a shallow roasting pan. Pour water, broth and vinegar into the pan. Insert a meat thermometer into the center of the roast. Bake uncovered for 2-3/4 to 3 hours, basting frequently. When meat reaches desired donnness according to the meat thermometer, remove from oven and let stand 10 minutes before slicing.

Note: Doneness table: medium-rare: 145 F medium: 160 F well-done: 170 F
