French Toast Casserole

Make this a day ahead of time and just pop it into the oven the next morning! Great for holiday mornings.

Serves about 8

10 cups cubed sturdy white bread
cooking spray
1 ( 8 oz.) block of reduced fat cream cheese, softened
8 large eggs
1 1/2 cups milk
2/3 cup half-and-half
1/2 cup maple syrup
1/2 teaspoon vanilla
2 tablespoons powdered sugar
Maple syrup

Place bread cubes in a 13 x 9-inch baking dish coated with cooking spray. Beat cream cheese at medium speed of mixer until smooth. Add eggs, 1 at a time, mixing well after each addition. Add milk, half-and-half, 1/2 cup maple syrup, and vanilla - mix until smooth. Pour cream cheese mixture over top of bread; cover and refrigerate overnight. Next morning; Preheat oven to 375. Remove bread mixture from refrigerator; let stand on counter for 30 minutes. Bake for 50 minutes, or until set (should be a nice light golden brown). Remove from oven, sprinkle with powdered sugar and serve with maple syrup.

Would make this again.
Have made this many times and is a family favorite.
Portugese sweet bread makes the best!
Don't be afraid to add cranberries, blue, or raspberries. Nuts or granola cereal also makes a difference.
Splashes of an irish cream, amoretto, frangelica, or kuluha adds an unexpected twist as well. Alcohol will bake off and flavor will remain.
Great brunch item!

Would make this again.
fixed this dish for the local fire department christmas toys for tots drive so they would have breakfast it was honestly gone in a matter of minutes. they really loved it.
