Orange-Apricot Stuffing

1 cup diced celery
3/4 cup chopped onion
2 cups cubed whole wheat bread
2 tablespoons dehydrated chopped parsley
1/3 cup dehydrated apricots, chopped
1/2 cup mandarin orange sections
1 1/2 cups turkey gelatin, turkey or chicken broth
2 egg whites
1 teaspoon turkey seasoning
1 teaspoon Gaylord Hauser Spike Seasoning

Microwave:
If you have prepared your turkey already and collected turkey gelatin, microwaving the stuffing may be the way to go. In 1-quart microwave-safe bowl, combine celery and onions. Cover with waxed paper and cook on HIGH or full power 2-1/2 to 3 minutes or until vegetables are tender, stirring halfway through cooking. In large bowl combine celery/onion mixture, bread cubes, parsley, poultry seasoning, Hauser Spike Seasoning, gelatin or broth, egg whites, oranges and apricots. Spoon mixture into lightly greased 2-quart microwave-safe casserole dish and cover with waxed paper or casserole lid. Microwave on HIGH or full power 8 minutes or until stuffing heats throughout, turning halfway through cooking.

Conventional Oven:
If you are preparing stuffing and turkey simultaneously, you can skim the liquid from cooking turkey and use in place of broth. In a small saucepan on medium heat, bring to a boil celery, onions and turkey broth or liquid. Reduce heat to low, cover and simmer 5 minutes or
until celery and onions are tender. In a large bowl combine celery/onion mixture, bread cubes, parsley, poultry seasoning, Gaylord Hauser Spike Seasoning, egg whites, oranges and apricots. Spoon into lightly greased 2-quart casserole dish and cover with aluminum foil or casserole lid.

Bake in oven last 1/2 hour of turkey roasting time.
