Creamed Onions

Serves about 6

18 to 20 medium onions
1/3 cup vegetable oil
3 tablespoons all-purpose flour
1-1/2 cups whole milk
1-cup shredded process American cheese
chopped peanuts for garnish (optional)

Peel onions and cook in a large mount of boiling salted water. When tender, drain and set aside. In the same pan used for the onions, stir together oil and flour; stir in milk and cook over low heat until thick, stirring constantly. Add the cheese and stir until melted. Add the onions and heat through. Place in a serving bowl and sprinkle with chopped peanuts for garnish, if desired.
