Gourmet Burgers

Serves about 4

For the Garlic Mustard Mayonnaise:
3/4 cup mayonnaise
2 tablespoons Dijon-style mustard
1-1/2 teaspoons minced garlic

3/4 pound sliced onions
2 tablespoons olive oil

4 ground beef patties
salt
freshly ground black pepper
8 slices Brie cheese
4 whole wheat buns, split
4 bacon slices, cooked crisp

To make the Garlic Mustard Mayonnaise, mix ingredients until thoroughly blended. Cover and refrigerate.

In a large skillet saute the onions in oil over low heat until caramelized (soft and brown). Cover and keep warm.

Grill ground beef patties to 157 F internal temperature. Season with salt and pepper to taste. Top with 2 slices Brie cheese and melt under broiler. Spread 1 tablespoon Garlic Mustard Mayonnaise on each cut side of buns. Place grilled burger on bottom bun half. Top with 1 bacon slice, 1/2 ounce onions and bun top.
