Steak Verde
For the Verde Sauce: 3/4 cups chopped parsley 1/2 cup extra virgin olive oil 1/4 cup drained cocktail onions 1-1/2 anchovy filet For the steak: 2 tablespoons minced garlic 1-1/2 teaspoons salt 1-1/2 teaspoons black pepper 4 beef stip loin steaks, short cut, 1 inch thick For garnish: 1/3 cup diced tomatoes
To make the Verde Sauce, place ingredients in a food processor and puree. Cover and reserve. e
