Rhubarb Pie
4 cups sliced fresh or frozen rhubarb 4 cups boiling water 1-1/2 cups granulated sugar 3 tablespoons all-purpose flour 1 teaspoon quick cooking tapioca 1 large egg 2 teaspoons cold water pastry for 9" double-crust pie 1 tablespoon butter or margarine milk and sugar
Pre-heat oven to 400 F. Place rhubarb in colander and pour boiling water over it and set aside. In a bowl, combine sugar, flour, and tapioca; mix well. Add rhubarb; toss to coat. I made it for Thanksgiving and my family raved about it. I will definitely use this recipe again! e
