Roasted Asparagus with Balsamic Vinegar

Serves about 6

1 tablespoon olive oil
1-1/2 pound slender asparagus, trimmed
3 tablespoons balsamic vinegar
Salt and pepper to taste
1/4 cup Parmesan cheese curls

Pre-heat oven to 500 F. Place a 10-inch ovenproof frying pan in the oven for 10 minutes. Remove from oven and swirl oil in pan. With tongs, roll asparagus in oil. Bake asparagus till tender-crisp to bite, 5-10 minutes. Drizzle with vinegar; add salt and pepper to taste. Scatter Parmesan cheese curls on top.

It tasted great. I might not cook it for so long I love really crisp asparagus.

Made this to accompany the ham for my Easter dinner and found it simple and delicious.
