Coconut Cream Easter Eggs

Make the filling a day ahead, then the next day melt the chocolate for coating.

1 medium potato, cooked and mashed
1 (16 ounce) package flaked coconut
1/4 teaspoon salt
1 teaspoon vanilla
3 pounds powdered sugar
1 pound semi-sweet chocolate, melted

Thoroughly mix potato, coconut, salt and vanilla. Gradually add sugar and mix until thoroughly blended. Shape into eggs and place on cookie sheet to dry overnight. The next day, dip eggs into melted chocolate. Place eggs on waxed paper to allwo chocolate to set. Enjoy.
