Bones of the Dead Cookies

2-1/2 cups all-purpoase flour
2 egg whites
2 cups granulated sugar
the juice of a lemon
4 ounces hazelnuts
4 ounces almonds

In a large bowl combine the flour, egg whites, sugar, and lemon juice. Work in the nuts, leaving them whole, and continue kneading until you have a fairly firm dough. Roll the ball of dough out with your hands on your work surface so as to obtain a snake; cut the snake into half-inch thick slices and shape the bit into bones with your hands. Preheat your oven to 360 F (180 C). Butter your cookie sheet, dust it with flour, lay the bones on it, and bake them for about 20 minutes. Let cool before serving.

Would make this again.
Fun recipe. I did have to add additional lemon juice to get it to a texture I could shape. I also had to press it into a log and then slice it. The texture and taste create the sensation of gnawing on a bone! Can't wait to make these with the grandkids!

strange cookies. Taste really good but the dough was so dry I couldn't really roll it like a snake I had to press it into a log and slice it. I used pecans and almonds because that is what I had. The nuts were falling out of the dough like crazy. When I sliced the dough I pretty much left the slice alone and pressed a whole almond into the middle so that it looked like a slice fo a large bone with marrow (almond) in the middle. The texture when eating them is more like a bone than the way they look. Very cool cookie that are fairly healthy and great tasting. The recipe could use a little tweaking.
